These are a great, low carb, low glycemic alternative to regular pancakes.

2 tsp butter or coconut oil
1 Tablespoon coconut flour
2 teaspoons ground flax seed
1/8 teaspoon salt
1/4 – 1/2 tsp coconut sugar (honey or maple syrup will also work), optional
1/4 teaspoon baking powder
1/4 teaspoon cinnamon
2 tablespoon milk (half and half or any dairy free milk might also work)
1 teaspoon vanilla
1 egg
1/4 cup blueberries, optional
Add butter to a skillet on medium low heat.
Add all ingredients to a bowl in order and mix well. Add to the skillet. Cook on each side for 4 – 5 minutes.
Remove from heat. Top with a pat of butter and a good quality, real maple syrup, if desired.
